The Wilhelmshavener Senfmanufaktur “Senfonie” is located in the historical Südstadt near the Kaiser-Wilhelm-Bridge, the landmark of the city Wilhemshaven. Here, mustard is made in a variety of flavours following traditional production methods.
More than 20 different mustards and chutneys are produced by the Senfmanufaktur. The mustard seeds are carefully ground, mixed with vinegar, wine, juices and meticulously chosen ingredients from the region. After a ripening period the mustards are then filled into pots by hand. The manufacturer consciously refuses the use of artificial aromas, colourings and flavour enhancers. Fig, Kashmir, and orange pepper mustard, as well as their “Krimsenf” or “Freesen Mustert”, made following an age-old frisian recipe with capers and sardines, build up this manufacturer’s high quality palate. Products such as the spicy devil mustard with chili or the extra spicy Senfonie Oriental, refined with sultanas and apple mousse, make mustard a true delicacy for special occasions. Vinegar mixtures, oils, homemade confitures, spices and chutneys round off this mustard manufacturer’s vast array of products.
The Wilhelmshavener Senfmanufaktur “Senfonie”, in Wilhelmshaven on the north coast of the Jade Bight, a large bay by the North Sea, makes mustard following Detlev Grunwald’s original recipes. In 1970, he began grinding mustard seeds by hand with a coffee grinder. Today, mustards are created with the help of an electrically powered stone mill, which carefully and slowly grinds the mustard seeds, so not a single drop of mustard oil is lost. The high quality compositions are distributed by his wife Bärbel with the help of her grandson, a trained chef. The direct contact to their customers at the weekly market and transparent production are more than important for this manufacturer, as the flavours are almost impossible to describe.
